Gourmet Vada Pav: A Modern Twist on Mumbai's Beloved Street Food

Vada Pav, traditionally hailing from Maharashtra, is not just food; it's an emotion for many, especially in Mumbai. Imagine biting into a soft yet slightly crispy bun and reaching the heart of it - a perfectly spiced, golden-brown potato dumpling. The heat from the green chili cuts through, while the contrasting sweet, spicy, and tangy chutneys wrap your senses in a whirlwind of flavors. The textures and tastes are a testament to Mumbai's bustling, vibrant street food culture, now reimagined with a gourmet twist for your kitchen.

Ingredients

Serving Size: Serves 4

From Your Pantry:

  • 2 cups All-purpose flour (for the artisanal buns)
  • 1 teaspoon Yeast
  • 1 tablespoon Sugar
  • Salt, to taste
  • 2 tablespoons Olive oil
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Mustard seeds
  • 4 Green chilies (adjust according to taste)
  • 1 teaspoon Asafoetida (Hing)

Additional Grocery Items Needed:

  • 4 large Potatoes
  • 1/2 cup Fresh coriander leaves
  • 4 cloves Garlic
  • 1 inch Ginger
  • 2 tablespoons Dry garlic chutney
  • 1/4 cup Tamarind chutney
  • 1/4 cup Mint-coriander chutney
  • Radishes (for garnishing)
  • Microgreens (for garnishing)

Preparation

  1. Bun Preparation: Start with the buns by mixing the all-purpose flour, yeast, sugar, salt, and 1 cup of warm water. Knead until you form a soft dough. Coat with olive oil, cover, and let it rise for an hour. After it has doubled in size, form small buns and bake at 375°F for 15-20 minutes until golden brown.
  2. Potato Dumpling: Boil potatoes until tender, then mash them. In a pan, heat some oil, add mustard seeds, turmeric, chopped green chilies, asafoetida, and sauté for a few minutes. Mix this into the mashed potatoes along with salt. Form into patties and shallow fry until crisp and golden.
  3. Chutneys: Prepare the tamarind and mint-coriander chutneys by blending the respective ingredients until smooth. For a gourmet touch, add a bit of garlic to the mint-coriander chutney for a unique flavor.
  4. Assembly: Slice the bun halfway through, spread a generous layer of dry garlic chutney on one side, and tamarind chutney on the other. Place the potato dumpling in the middle, add a dollop of mint-coriander chutney, and garnish with thinly sliced radishes and microgreens.

Expert Tips

  • For an extra crispy dumpling, coat the mashed potato patties with a thin layer of semolina before frying.
  • If you prefer a healthier version, consider baking the potato dumplings instead of frying.

Serving Suggestions

To complement this gourmet Vada Pav, serve it with a side of freshly made masala chai or a cool cucumber mint raita. The spicy, tangy flavors of the Vada Pav paired with the soothing raita or the warmth of the chai create a perfect balance for an enjoyable meal.
